Como talvez nenhum outro país no mundo, a França influenciou fortemente a maneira como pensamos a culinária – cuisine -, a alegria de viver – joie de vivre – e até mesmo a arte de viver – savoir-vivre. Ainda assim, pode ser fácil esquecer quanta sabedoria e conhecimento – quanto savoir-faire – os franceses colocam em sua arte culinária.
Isso é especialmente verdadeiro para seus produtos panificados. Baguetes e croissants são exemplos óbvios, uma vez que são os alimentos preferidos nos cafés da manhã em quase todos os países. Porém, um pouco menos óbvio seja, talvez, o brioche. Na França, esses pães de confeitaria feitos de massa fermentada são, de fato, tão populares quanto seus homólogos de massa folhada, os croissants. Para Tobias Zehnder, tecnólogo de massa da FRITSCH, um café da manhã perfeito não está completo sem um brioche fresco e fofo.
“Eu gosto da consistência macia e exuberante do brioche. Fico impressionado com o enorme volume que ele obtém com a massa airada. Eu também adoro o sabor levemente amanteigado, que vem do fato de o brioche ter um teor de manteiga mais alto do que uma massa levedada clássica“. Tobias descreve seu gosto pela especialidade francesa.

Tobias é tecnólogo de massa na FRITSCH desde abril de 2016. Na verdade, praticamente cresceu com a empresa, onde seu pai, Gerhard, já trabalha há mais de 40 anos. “Ainda enquanto estava estudando para me tornar um padeiro, percebi que também queria trabalhar na FRITSCH um dia”, conta ele. Seu primeiro passo depois de terminar a escola foi fazer um estágio de padeiro em sua cidade natal, Markt Einersheim. Poucos anos após sua formação, mudou-se para a Áustria com o objetivo de adquirir novas experiências em diferentes padarias. Depois disso, ele completou seu treinamento de mestre padeiro na Câmara de Produtos Artesanais de Munique e um estágio no World of Bakery (WoB). Nesse estágio, ele ainda sentia que não tinha a experiência necessária no setor. Afinal, a experiência é especialmente importante para um tecnólogo de massa que deseja atender clientes neste segmento tão importante. Então, ele passou mais dois anos em uma padaria industrial em Lutherstadt Eisleben antes de retornar à FRITSCH.
A palavra brioche vem do verbo “brier”, palavra do dialeto antigo normandês que significa amassar ou triturar, ou talvez até mesmo enrolar a massa com um rolo. Embora nunca tenha sido provado totalmente, é amplamente aceito que o brioche é originário da Normandia. A região do Canal da Mancha é famosa, desde a Idade Média, pela alta qualidade de sua manteiga, que por sua vez é um ingrediente importante do brioche. De lá, a pequena iguaria seguiu para Paris, onde garantiu um lugar de destaque permanente na culinária francesa. O horário preferido para comer brioche na França é no café da manhã, mas também são servidos como lanche doce com café à tarde. “A massa de brioche é ideal para criar muitos produtos novos. O que é interessante disso, é que você pode decorá-lo com quase qualquer cobertura, como amêndoas, sementes de papoula, flocos de coco, raspas de cacau, nozes ou frutas secas, para criar todos os tipos de sabores ”, diz Tobias com entusiasmo.
Zehnder está disposto a colocar todo o seu conhecimento e a experiência que adquiriu desde jovem, para encontrar a receita perfeita de brioche. O “brioche tressée”, trançado com dois ou três fios de massa, é uma variante típica do brioche. “Então, para mim, o óbvio é fazer uma variedade maior de produtos trançados com a massa de brioche – talvez nós, pequenas tranças de fio único ou vários tipos de pretzels. Os pretzels com fermento doce são muito populares na Rússia, por exemplo. Infelizmente, nossa MULTITWIST é frequentemente associada à produção apenas de pretzels alemães clássicos ”, afirma Tobias. Ele espera no futuro inspirar mais padeiros a usar a MULTITWIST para processar outros tipos de massa, como a massa de brioche, por exemplo. No World of Bakery, ele tem as condições ideais para testar novas receitas, produtos e configurações de linha junto com clientes de todo o mundo.
Pessoalmente, ele adora fazer pães de hambúrguer com massa de brioche. “Os pãezinhos macios e fofos combinam perfeitamente com um disco de hambúrguer de boa qualidade. É um sucesso absoluto com meus amigos ”, relata Tobias. Seu truque? Além dos ingredientes típicos do brioche – farinha, água, açúcar, sal, fermento, ovo inteiro e manteiga – ele também usa a técnica da esponja e da massa que, entre outras coisas, promove a fermentação e a formação de poros. Além disso, ele até criou uma receita especifica para ser feita na MULTITWIST.
“Eu modifiquei ligeiramente a proporção de ovo inteiro para água, sem perder nada na sua estrutura. Isso dá à massa uma estabilidade extra, facilitando a formação da trança na MULTITWIST“, explica o especialista em massa.
Tobias Zehnder é um mestre padeiro treinado e tecnólogo de massa da FRITSCH. Após seus estudos, ele trabalhou como padeiro em Markt Einersheim e na Áustria, e então realizou um estágio no WOB antes de trabalhar para um produtor industrial em Lutherstadt Eisleben. Brioches é sua grande paixão, tanto que gosta até de usar a massa de brioche para fazer pãezinhos de hambúrguer. De alguma forma, ele não compartilha do gosto de seus amigos e familiares por donuts berlinenses.
